Apple Radicchio Slaw

To be honest, I’ve never been much of a coleslaw fan. But if it’s topping my pulled pork sandwich, okay – I’ll cave. So when I decided I was going to spend the weekend at my folks place smoking a pork shoulder to make some pulled pork sandwiches, I figured some home made cole slaw was in order.
I didn’t want to make the same old slaw. Mayo. Vinegar. Cabbage. Carrots. So, as always, I went a bit off the grid. Introducing the perfect sidekick for smoked pulled pork, Apple Radicchio Slaw.

Apple Radicchio Slaw
1 Granny Smith Apple, cored and julienned
2 cups radicchio, shredded
2 cups cabbage, shredded
1/4 cup slivered almonds

Slaw Dressing
Juice of 1 lemon
2 tbsp mayonaise
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp poppy seeds
1 tsp salt
Freshly ground pepper to taste

Whisk the dressing ingredients together until well combined. Prepare apple, radicchio and cabbage in a big bowl. Toss with the dressing. Cover and let stand for about a hour.

Serve with your favourite summer dish.
