Ginger Sesame Asian Chicken Salad

The arrival of summer brings many things. Cottages. Patios. Beers. Nachos. While all of this eating and drinking can add up and be quite unhealthy, Katie and I have decided to balance it out with daily exercise and lighter weekday meals. This dish is a variation of a few different recipes that Katie gathered for me. It combines the classic asian flavours of soy, ginger and sesame with the sweetness of brown sugar and honey, all combined with grilled chicken and fresh vegetables. Light, refreshing and satisfying.

Ginger Sesame Asian Chicken Salad

1 head romaine lettuce, chopped
1/2 English cucumber, thinly sliced
1 large carrot, shredded
1 red bell pepper, thinly sliced
1 green onion, sliced
1/2 avocado, thinly sliced
2 chicken breasts
1/2 tsp sesame seeds
3 tbsp honey

Ginger Sesame Dressing
1/2 cup olive oil
3 tbsp soy sauce
3 cloves garlic
2 tbsp minced ginger
1 tbsp honey
1 tbsp brown sugar
1/2 tsp sesame seeds

Start by preheating your grill. Combine all of the dressing ingredients thoroughly, then combine 1/3 cup of the salad dressing and 3tbsp of honey with the chicken and let marinate for 30 minutes. When you’re ready, start grilling your chicken. While it is cooking, prepare all of the veggies. Begin with a bed of lettuce topped with cucumber, red pepper, grated carrot and avocado. When your chicken is done, place on top of the bed of veggies. Garnish your salad with thinly sliced green onions and sesame seeds. Pour desired amount of ginger sesame dressing over salad. Serve, and enjoy.
