Tilapia Fish Tacos

Whenever I go to Katie’s cottage on Chandos Lake, I take full advantage of a few things; the boat, playing with her family dog Flicka, and using their BBQ. A few weeks ago we were down at Chandos with some of her family and I decided to make tilapia fish tacos, grilled on the BBQ. These are a delicious alternative to your classic ground beef tacos that will have you going back for seconds and thirds.

Tilapia Fish Tacos
4 filets tilapia
1 tsp chili powder
1 tsp cayenne pepper
1 tsp paprika
1 tbsp canola oil
Salt & Pepper to taste

Sour cream
1 tsp cumin
Black beans
Iceberg lettuce
Monterey Jack cheese
Tortilla shells
Mango avocado

Start by tossing the tilapia in the canola oil. Add the chili powder, cayenne, paprika, salt and pepper and mix until the fish is coated. Set aside and let marinate for 1-2 hours.

While the fish is marinating, make the mango avocado salsa – it is the perfect compliment for this dish. Then, mix the cumin in with the sour cream, drain and rinse the black beans and clean, shred the iceberg lettuce and grate the cheese.

Now it’s time to grill. Place the filets on a heated BBQ and cook for about 5 minutes. Flip and cook for another 5 minutes. Be careful, tilapia is very tender and can fall apart easily. Once cooked, remove and pull apart into chunks. Serve tilapia on a warmed tortilla shell with mango avocado salsa, black beans, lettuce, cheese and sour cream mixture. Cheers, enjoy.
